Grandmama’s Oyster Rockefeller
Oyster Rockefeller
Ingredients:
24 Happy Oysters (Shucked)
3-4 Cups of Fresh Spinach Chopped
1/2 Pound of Bacon sliced into small pieces that fit atop of oysters (Sub Pancetta)
1 .5 Cups of Bread Crumbs - Use Panko, Italian Bread crumbs, Crushed up Ritz Crackers, or a Mix of two.
4 Cloves of Garlic diced or crushed
2-3 Shallots chopped small (sub 1 whole yellow onion)
1 Stalk of Celery, sliced in half then diced
3/4 Cup of Parmesan Shredded
& 1 Cup of Cheddar & Gruyere Cheese Shredded (sub melty cheese)
1 Bunch of Fresh Parsley chopped small (sub in Chervil or Celery Leaves)
Juice of 1 Lemon (sub white wine, beer, or cider)
6 Tablespoons of butter (sub Olive Oil)
Salt
Fresh Cracked Pepper
Tabasco Sauce
Directions:
Preheat Oven to 450 Degrees
Grab 2 Muffin Pans
Heat up 3 tablespoons of butter, sauté celery, 3/4 of the garlic and shallots mixture. Once everything is soft, toss in the spinach and cook down till it starts to wilt. Add 3-4 dashes of Tabasco sauce and add salt & pepper to taste. Then empty pan into a bowl and set aside.
Clear the pan with lemon juice, add 3 more tablespoons of butter at medium to low heat. Toss in the rest of the garlic and shallots mixture, and Parsley. Cook down until fragrant then toss with bread crumbs in separate bowl till evenly mixed. Set Aside
Place an sucked oyster on each muffin opening of the muffin pans.
Top the oyster in this order.
a. Spinach Mixture
b. Bread Crumbs
c. Shredded Cheese
d. Bacon Pieces
Make sure to add enough cheese so that it melts and creates a layer that traps the liquid inside
Cooke for 10-15 minutes at 450 degree, or until cheese is melted.
Be careful when you pull out the pan, and then be careful when you handle the oysters.
Serve with Crunchy Bread for Dipping into the shell.
